Tumaca bread and olives

Tumaca bread is one of the best-known recipes in Catalonia, the region of Spain where Barcelona is located. Discover how easy it is to make it and enjoy it with some delicious sliced olives.

• 3 oz. of Manzanilla green olives

• 1 baguette loaf

• 3.5 oz. of Serrano ham

• 3 ripe tomatoes

• 4 garlic cloves

• 2 tablespoons mayonnaise

• 1 twig thyme

• Olive oil

Directions

Step 1: To prepare the allioli, use a mortar and pestle. Crush the garlic and add some olives, crush again to make a paste. Mix in the same mortar with the mayonnaise. Set aside.

Step 2: Put the tomatoes with the bud upwards and cut an X at the top put on a baking sheet. In the hole of the X put some sugar in each tomato. In the same tray put the garlic with skin, the thyme and abundant oil. Bake for 45 min at 160º. Remove the tomatoes and chop removing their skin. Set aside.

Step 3: Cut the loaf of bread into slices. Toast it lightly in the oven.

Step 4: In a frying pan, lightly sauté the slices of olives.

Step 5: On each slice of bread, spread a little bit of Tumaca and a few slices of ham. Finish with a teaspoon of allioli and abundant slices of olives.
