Ingredients 4 people
Difficulty: Medium
Prep Time: 30 min
• 5.5 oz. Hojiblanca black olives
• 4 oz. butter
• 1 bar of dark chocolate
• 2 eggs
• 2 egg yolks
• A few drops of vanilla essence
• 3 tablespoons sugar
• 3 tablespoons brown sugar
• 2 cups of flour
• 1 tablespoon cocoa powder
• 2 oz. of pine nuts
• A pinch of salt
Directions
Step 1: Put some paper towel on a plate. Put the olives on top separately and put in the microwave for 3 minutes. After, open the paper towel and remove. Repeat procedure until they lose all the liquid and can be broken by hand. Crush them using a mortar and pestle.Step 2: Preheat the oven to 350°F with heat at bottom and top. Meanwhile, melt the butter with the chocolate in bain-marie often stirring. Reserve.
Step 3: In a bowl beat the eggs with the yolks and the vanilla with the help of rods. It must be very frothy. Add to the eggs the sugar. Do it in two batches: first one half and, after stirring very well, the second. Mix well with the rods and finally add the molten chocolate that was reserved, the flour, the cocoa powder and the pinch of salt. Mix thoroughly.
Step 4: Add the pine nuts and dehydrated olives to the dough.
Step 5: Grease a large pan with butter or oil and pour the mixture. Check that it is even and bake for about 30 minutes at 375°F. You must not pass this time, because otherwise it will be quite dry.
Step 6: Remove from the oven and allow to cool on a rack.
