Tropical quinoa salad with olives
From the Tropics we bring you this refreshing and healthy quinoa salad with olives. Perfect to take care of yourself without giving up the most authentic flavor.
Ingredients 4 people
Prep Time: 30 minutes
• ½ cup Queen pitted olives
• 1 cup of mixed quinoa
• 2/3 cup fresh peeled mango
• ½ cup of fresh cheese
• 1 small red pepper
• 4 branches of basil
• 1 tbsp. honey
• Apple vinegar
• Extra Virgin Olive Oil
DirectionsStep 1: Chop the peppers into small squares and the mango into slightly larger pieces. Crumble the cheese with your fingers and set aside.
Step 2: Put a saucepan with plenty of water to boil, add salt and quinoa. Cook for 15 minutes and drain. Set aside at room temperature until it cools.
Step 3: Make the vinaigrette by mixing vinegar, honey and extra virgin olive oil.
Step 4: In a bowl mix the olives, quinoa, mango, peppers, basil leaves and vinaigrette.
Step 5: Serve in individual bowls and sprinkle fresh crumbled cheese, sliced and whole olives to decorate.
